Mango Muffins: Anti-inflammatory cookbook

Now that the weather is warming up (well in NSW anyway), I'm starting to see mangoes in the shops.

So, if you're looking for a cooking activity for the kids, or would just like to bake a healthy treat. Here's one of our favourite recipes from our Anti-inflammatory eating cook book.

Mango muffins                                             

20 minutes preparation time, 20-30 minutes cooking time 

Ingredients:

2 ripe mangoes, or 2 cups frozen mango

1 handful frozen berries

½ - 1 cup almond meal

½ - 1 cup gluten free self-raising flour

2 eggs

1 tablespoon chia seeds

Almond or soy milk as needed for moisture 

Method:

  1. Preheat oven to 180oC and lightly grease a muffin tray or line with muffin patties.
  2. Blend mango, then combine with frozen berries, almond meal, gluten free self-raising flour, eggs and chia seeds.
  3. Add a splash of milk as required to moisten batter and spoon batter into muffin tray.
  4. Bake in oven for approximately 20-30 minutes, or until a skewer gently poked into muffin can be removed clean of batter.

 

Makes 10-12 muffins

Note: this recipe also works well with seeds, dates and other nuts or fruit added in as well or instead.
