This is a pizza without the lashings of saturated fat found in many, but full of flavour and nutritious ingredients.
Ingredients:
- 1 Wholemeal pita (Khobz is great for pizza bases)
- ¼ cup low fat shredded cheese
- 1 dessert spoon Basil pesto
- 1 dessert spoon Tandoori paste
- 1 Roast Chicken breast, shredded
- 1 Mushroom, chopped
- 1 handful Baby Spinach
- 5 Semi-dried tomato, drained and patted of oil
- ¼ Onion, chopped
- ¼ Red capsicum, chopped
- 5 Cashews
- Drizzle Low fat natural yoghurt ( Jalna A2 yoghurt is great)
- Coriander and mango chutney if desired (I didn’t use these, but the original recipe does)
Method:
Spread basil pesto and tandoori paste on base*
Add baby spinach, onion, mushroom, capsicum, tomato, cashews and chicken
Sprinkle with cheese
Bake in oven at 200C until cheese starts to go brown (about 10-15mins)
Drizzle with yoghurt
*You can cook tandoori chicken yourself, but using roast chicken and paste on the base works really well if you’re running low on time
